Beet & Berry Smoothie Bowl

Did you know that beets are an excellent source of antioxidants?  Beets are high in immune boosting Vitamin C, fiber, and essential minerals like potassium which is essential for healthy nerve and muscle function.  Beets also contain manganese which is good for your bones, liver and kidneys and pancreas. This makes beets are true super food!

I have been obsessed with beets!  I even make smoothies with them now.  Here is a simple smoothie bowl recipe that even kids would enjoy without knowing it has vegetables in it.   It’s so vibrant and tasty! They will ask for seconds!

8 oz of almond or cashew milk

half of a small raw beet, cut up

1 frozen banana

1/2 cup of fresh strawberries

Blend it all in a blender until smooth and pour it in a deep bowl.

Topping: fresh strawberries, bananas, hemp seeds, blueberries, pumpkin seeds.

Super delicious!
