Autumn Salad

Are you looking for a fall inspired salad recipe? Look no further!
This wholesome grain, greens, nuts and roasted vegetable salad has been my go to lately. It’s perfect for meal preps as well. It’s loaded with butternut squash, arugula, kale, crisp apples, maple candied walnuts, pomegranates, cranberries and served it with delicious homemade balsamic maple Vinaigrette. If you have all the ingredients, you can make this at no time.

Ingredients

For the salad:
2 cups of arugula
1 cup of chopped Tuscan kale
1 cup of roasted butternut squash
2 tbsp of vegetable oil
1 cup of packet of cooked Organic Quinoa or Brown Rice.
1/2 cup candied walnuts
1/3 cup pomegranate seeds
1/3 cup cranberries
2 apples sliced


Dressing:
1/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1 tbsp of maple syrup
1 tbsp of Dijon mustard
1 garlic minced
1 tsp of black pepper
1 tsp salt

Method

Mix 2 cups of cubed butternut squash with 2 tbsp of vegetable oil, 2 tsp of of Cajun spices or just salt and pepper and roast at 400 F in the oven for 20 min until it’s nice and golden brown. Meanwhile mix all the dressing ingredients in a jar and shake well to combine.
Arrange the salad with all the ingredients. Drizzle with the balsamic maple dressing and enjoy.
