Earth Day Quinoa Bowl

Happy Earth Day! How are you celebrating today?

I personally think Earth Day should be celebrated every day not just one day a year.  Don’t you agree?  We all should be driving less by omitting carbon foot print, eating more plant based foods, conserving more water and energy and recycling every day!

In celebration of the Earth Day today, I decided to make something very earthy and wholesome for lunch. I needed to satisfy my hunger after an intense Zumba class this morning.  Quinoa with black beans and rainbow of veggies was the answer.

This recipe is super easy to make. I topped it off with a flower avocado. I am adding a step by step instructions to show you guys how to make this flower avocado. Hope you’ll like it.

Ingredients

1 cup of quinoa.  I used Trader’s Joe’s tri-color organic quinoa.  It’s one of my favorites.

1 cup of cooked organic black beans. You can use organic canned black beans from Trader’s Joe’s if you don’t want to cook your own beans.

1/2 cup of chopped organic carrots,

1/3 chopped organic cabbage,

1/3 cup of chopped bell peppers,

1/3 cup of chopped green onions,

1/3 cup of chopped cilantro,

1/3 cups of slivered almonds.

Half of avocado for the flower

2 tablespoons of organic coconut oil melted.

1 teaspoon of curry powder

Salt and pepper to taste.

You can also add some roasted or dehydrated eggplants if you have any laying around but you don’t need to.2

Method

Cook the quinoa as per directions on the package. Pour the cooked quinoa in a bowl, add the coconut oil and stir well.  Add the organic black, beans, chopped vegetables, cilantro, almonds, curry powder, salt and pepper. Cut the avocado as per the instructions above, decorate and now you are ready to destroy this bowl of beauty!  Enjoy!
