Vegan Corn and Vegetable Ravioli

As promised, sharing my Vegan Corn and Vegetable Ravioli recipe with you guys today. This is a lengthy recipe but I tried to write it up as detailed as possible. Hope you will give it a try.

Ingredients

Ravioli Dough
* 2 2/1 cups flour
* 1/2 tsp salt
* 1 tbsp EVOO
* 3/4 cup warm water
Ravioli Filling
* 2/3 cup vegan ricotta (kite hill)
* 1 cup frozen or fresh corn.
* 1 cup fresh spinach
* 1 tbsp olive oil oil
* 1 tsp garlic powder
* 1 tsp onion powder
* salt and pepper to taste
For the sauce:
3 tbsps of vegan butter
5-6 leaves of sage for garnish
1/2 cup fresh or frozen corn
1 tsp of dry thyme
1 tsp of nutmeg
1/2 cup unsweetened plain cashew milk.
Vegan Parmesan.

Method

Heat oil in a pan over medium heat. Add the spinach, corn, garlic powder, thyme & onion powder and sauté until spinach is wilted and corn is soft. There should be no liquid left from spinach.

Transfer to a food processor, add the vegan ricotta and salt, pepper to taste. Pulse until combined. Set aside.


Make the dough.
In a bowl, combine the flour with the salt. Add the oil and the warm water, knead until you have a thick and elastic dough. Cover, let it rest for 30 minutes. Divide the dough into 6 pieces. Roll out the pasta until 1 mm thick and rectangle shape. Place one piece of rolled dough over the ravioli mold. Sprinkle it with some flour to prevent from sticking.
Spoon 1 tsp of the filling into each portion. Be careful not to overfill the sections. Place another piece of rolled pasta dough on top of the filled mold. Seal the edges of the ravioli by rolling your rolling pin over the top, gently at first, and then more firmly.
Repeat the process with the rest of the pasta dough and filling.
Fill a large pot with salted water and bring to a boil. Add the ravioli and cook for 3 minutes or until they float. Remove


Make the sauce.
Melt the Vegan butter in a pan over medium heat.
Pour the cashew milk, garlic powder, nutmeg, thyme, vegan Parmesan, corn, and salt and pepper and stir to combine.
Bring to a simmer and cook until thickened, around 2-3 min.


Add vegan ravioli and stir until combined and fully coated!
