Vegan Pumpkin Pie
Happy weekend my loves. I thought I share my pumpkin pie recipe with you today since #thanksgiving is around the corner. I love this recipe so much. It always comes out just perfect.
Ingredients
1 can (15 oz) organic pumpkin purée
1 cup coconut cream or milk
1 tbsp of tahini (optional)
1/2 cup coconut or brown sugar
1/3 cup pure maple syrup
1 tbsp pumpkin pie spice mix
4 tbsps of corn starch
1 tsp vanilla extract
1/2 tsp salt
Method
Blend all the above ingredients in the blender until smooth. Use a ready vegan pie crust or make your own. Preheat oven at 350F. Roll the pie crust and place it in the pie dish. Pour the pumpkin pie mix carefully. Bake for 1 hour until pie is golden brown. Chill the pie before serving. Enjoy.
