Vegan Passion Fruit Cake

My passion fruit tree blessed me with so many fruits this year! I’ve been enjoying them in my smoothies, drinks and baking with them as well. So today, I am sharing my favorite easy vegan passion fruit cake recipe with you. Save it and make it later.

Ingredients

Dry cake ingredients
2 cups all-purpose flour
3/4 cup sugar 
1 cup desiccated coconut
2 teaspoons baking powder
1 teaspoon baking soda 
1/2 -3/4 cup passionfruit pulp
2/3 cup coconut or almond milk 
1/3 cup light olive oil
3 tablespoons on lemon juice
Passionfruit icing
1 ½ cups powdered sugar / icing sugar
2 tablespoons passionfruit pulp
1 tablespoon melted vegan butter
1 tablespoon of cold water

Method

Preheat the oven at 370F. Prep your loaf pan by spraying with oil and lining with parchment paper. In a bowl, gently combine the dry ingredients with wet ingredients until smooth. Don’t over mix. Pour the batter into the loaf pan. Bake the cake for 45-50 min until the top is golden and the toothpick inserted comes out clean.
For the frosting, mix the frosting ingredients until smooth. Let the cake cool completely before frosting. Enjoy!
