Fried Oyster Mushroom Torta
Here in San Diego, we undoubtedly have the best Mexican food! Before becoming vegan I used to love getting Tortas from my favorite Mexican restaurant. Torta is basically a sandwich which consists of a crusty roll sliced in half and filled with a variety of meats and other ingredients like refried beans, lettuce, tomatoes, jalapeños, pickled onions, and maybe cheese or sauce. This is my vegan take on it which I made with fried oyster mushrooms. I hope you will give it a try.
Ingredients
2 torta rolls
1 tbsp of vegan butter
1/2 lbs of oyster mushrooms or more depending how “meaty” you want your torta
2 tbsp of oil for cooking
1 tbsp of soy sauce
1 mashed avocado
2 tbsp of refried beans
Shredded lettuce or cabbage
Some sliced jalapeños and radishes
Pickled onions
Sauce of your choice. I used creamy vegan cilantro sauce

Salt and pepper
Method
Fry the mushrooms in 2 tbsp of oil in a cast iron by pressing with another heavy pan until the bottom of the mushrooms get nice and crispy. Add 1 tbsp of soy sauce and flip the mushrooms and cook until the other side is crispy. Press it with another heavy pan and cook for 3-4 min on high.
Remove the mushrooms from the pan, slice them. Slice the toast rolls in half and spread some vegan butter on them. Pan grill the torta slices until golden. Assemble the torta spreading the refried beans first, then layer it with sliced oyster mushrooms, sauce, tomatoes, lettuce, onions, jalapeños and mashed avocados. Serve with some corn or plantain chips, beer or kombucha.
